Ruminants are mammals that are able to acquire nutrients from plant-based food by fermenting it in a specialized stomach prior to digestion, principally through microbial actions. The process typically requires the fermented ingesta (known as cud) to be regurgitated and chewed again. The process of rechewing the cud to further break down plant matter and stimulate digestion is called rumination. The word "ruminant" comes from the Latin ruminare, which means "to chew over again".

Wiederkäuer (Ruminantia) sind eine Unterordnung der Paarhufer (Artiodactyla). Sie sind Pflanzenfresser und besitzen einen mehrteiligen Wiederkäuermagen, der es ihnen durch mikrobielle Verdauung ermöglicht, auch solche Kohlenhydrate als Nahrung zu nutzen, die für andere Säugetiere mit nur einem Magen (Monogastrier) unverdaulich sind (beispielsweise Zellulose). Wiederkäuer werden in die beiden Gruppen Hirschferkel und Stirnwaffenträger unterteilt.

| Herkauwers (onderorde Ruminantia van orde Artiodactyla, evenhoevigen) zijn herbivoren die hun eten nadat het in de maag geweest is nogmaals in de mond kauwen. Ze vormen de grootste onderorde van de evenhoevigen, met zo'n 200 soorten in meer dan 60 geslachten.

Przeżuwacze (Ruminantia) – podrząd ssaków  oraz przyjętego w potocznym nazewnictwie rzędu parzystokopytnych. Są to ssaki o stosunkowo wysokich kończynach, gęstym futrze i czaszce uzbrojonej (z wyjątkiem kanczyli) w rogi lub poroże. Dawniej do przeżuwaczy zaliczano też wielbłądowate. Przeżuwacze są roślinożerne, a ponieważ połykają pokarm słabo pogryziony, ulega on później przeżuciu, w chwilach, gdy zwierzęta się nie pasą. W żołądkach przeżuwaczy występują bakterie symbiotyczne trawiące błonnik. Żołądek u większości gatunków składa się z czterech komór (żwacz, czepiec, księgi i trawieniec).
