tannin

A tannin (also known as vegetable tannin, natural organic tannins, or sometimes tannoid, i.e. a type of biomolecule, as opposed to modern synthetic tannin) is an astringent, bitter plant polyphenolic compound that binds to and precipitates proteins and various other organic compounds including amino acids and alkaloids.

Die Tannine (von franz. tanin Gerbstoff; auch bekannt als kondensierte Proanthocyanidine) sind pflanzliche Gerbstoffe, die in dikotylen Stauden, Sträuchern und Baumblättern und anderen Pflanzenteilen besonders der Tropen und Subtropen weit verbreitet sind und von pflanzenfressenden Säugetieren aufgenommen werden. Diese Verbindungen haben eine Molmasse von 500-3000 Da.

Tannine is een verzamelnaam voor bepaalde chemische verbindingen. Tannines zijn polyfenolen. De stof is van invloed op de smaak, kleur en structuur van onder andere wijn en thee. Ook in hout (onder andere eik) en vruchten (onder andere kweepeer, avocado, kaki) en galappels zit tannine.

Les tanins sont des substances naturelles phénoliques qui peuvent précipiter les protéines à partir de leurs solutions aqueuses. Ce sont des métabolites secondaires des plantes supérieures que l'on trouve dans pratiquement toutes les parties des végétaux (écorces, racines, feuilles, fruits, etc.) où ils jouent le rôle d'armes chimiques défensives contre certains parasites. Sur le plan chimique, ils sont constitués soit de polyol (glucose le plus souvent), ou de catéchine ou de triterpénoïde auquel sont attachés des unités galloyles (ou leurs dérivés) soit d'oligomères ou polymères de flavanols.

Taniny, garbniki roślinne, garbniki naturalne (E181) – grupa organicznych związków chemicznych, pochodne fenoli, naturalnie wytwarzane przez rośliny. Masa cząsteczkowa tanin mieści się w zakresie od kilkuset do kilku tysięcy Da. Wyróżniane są taniny łatwo hydrolizujące oraz skondensowane. Pierwsza grupa to związki powstałe w wyniku polimeryzacji kwasu galusowego lub innych kwasów fenolowych oraz cukrów, zwykle glukozy. Grupa ta łatwo ulega hydrolizie kwasowej. Druga grupa ulega hydrolizie jedynie przy zastosowaniu silnych kwasów. Taniny skondensowane tworzone są przez łączenie flawonoidów. Taniny nadają roślinom cierpki, nieprzyjemny smak, wykazują też działanie toksyczne w tym powodują denaturację białek. Polimeryzowane i przechowywane są w tanosomach. W roślinie pełnią funkcję obronną odstraszając zwierzęta roślinożerne. Taniny wydzielane przez rośliny wykazują także działanie allelopatin. Zdolność denaturacji białek została wykorzystana przez człowieka w garbarstwie. Denaturacja włókien kolagenowych, obecnych w skórach zwierzęcych, powoduje, że białka te stają się trudno dostępne dla drobnoustrojów.
