Quinoa
Quinoa (, from Quechua kinwa or kinuwa ) is a species of the goosefoot genus (Chenopodium quinoa), a grain crop grown primarily for its edible seeds. It is a pseudocereal, similar in some respects to buckwheat, rather than a true cereal, as it is not a member of the true grass family. As a chenopod, quinoa is closely related to species such as beetrootsspinach and tumbleweeds. As a member of the Amaranthaceae family, it is related to and resembles amaranth, which is also a pseudocereal.

Quinoa
An ancient grain from the Andes, rich in protein, lysine, calcium, and iron. It is whitish, small and pearl shaped. Quinoa cooks like rice (at half the time) and expands to four times its original volume. Its flavor is delicate, plain, and has been compared to that of couscous. It can be included as main dish, a side dish, in soups, in salads and puddings. It can be found in most health food stores.
