Extracellular polymeric substance
Extracellular polymeric substances (EPS), are high-molecular weight compounds secreted by microorganisms into their environment. EPS establish the functional and structural integrity of biofilms, and are considered the fundamental component that determines the physiochemical properties of a biofilm.
