Fusel alcohols, also sometimes called fusel oils or potato oil in Europe, are a mixture of several alcohols (chiefly amyl alcohol) produced as a by-product of alcoholic fermentation. The word fusel is  German for "bad liquor".

Fusel ist eine gebräuchliche umgangssprachliche Bezeichnung für schlechte, nicht fachgerecht destillierte und – davon abgeleitet – für billige Branntweine oder Spirituosen, in jüngerer Zeit auch für Weine geringerer Güte.

Fusel, eller fuseloljer, er en fellesbetegnelse for forskjellige kjemiske stoffer som oppstår i tillegg til etanol under gjæring. Hoveddelen av dette er høyverdige alkoholer som propanol og butanol, men også estere, aldehyder og karboksylsyrer forekommer.
