Gelatinase
In biology and chemistry, gelatinase is a proteolytic enzyme that allows a living organism to hydrolyse gelatin into its sub-compounds (polypeptidespeptides, and amino acids) that can cross the cell membrane and be used by the organism. It is not a pepsin.
