Kvass is a traditional Slavic and Baltic fermented beverage commonly made from black or regular rye bread. The colour of the bread used contributes to the colour of the resulting drink. It is classified as a non-alcoholic drink by Russian standard, as the alcohol content from fermentation is typically less than 1.2%. Generally, the alcohol content is low (0.5–1.0%). It may be flavoured with fruits such as strawberries and raisins, or with herbs such as mint.

Der Kwas oder Kwass (veraltet auch Quas; ) ist ein altes ostslawisches Getränk, welches durch Gärung aus Brot hergestellt wird. Kwas ist heute überwiegend in Russland und der Ukraine, aber auch in anderen Ländern Osteuropas verbreitet. Obwohl meist aus Brot oder Zwieback hergestellt und deshalb auch unter dem Begriff Brotgetränk oder Brottrunk (eingetragene Marke) bekannt, gibt es auch andere Rezepturen, zum Beispiel Kwas aus Birnen, Beeren oder anderen Früchten.

Kvas (Russisch en Oekraïens: квас, Pools kwas chlebowy (letterlijk "broodzuur"), Litouws: gira, Estisch: kali; verouderd Nederlands ook wel kwas) is een traditionele, licht koolzuurhoudende en niet- tot licht alcoholische drank uit Rusland, Oekraïne en andere Oost-Europese landen. De drank wordt gemaakt op basis van water, roggemeel en mout, dat een gistingsproces doormaakt. Kvas wordt vaak ook bereid met brood en soms ook met vruchten, zoals peren, aardbeien, bessen of rozijnen en wordt soms ook gekruid met munt of zelfs berkensap.
