Root vegetables are plant roots used as vegetables. While botany distinguishes true roots such as tuberous roots and taproots from non-roots such as tubers, rhizomes, corms, and bulbs (though some contain both taproot and hypocotyl tissue, making it difficult to tell some types apart), in ordinary, agricultural, and culinary use, "root vegetable" can apply to all these types.

Een wortelgewas is een gewas dat om de wortel(s) geteeld wordt. Tot de wortelgewassen behoren verschillende groentesoorten, waarvan de wortels als voedingsrijke opslagorganen dienen en daardoor voor de consumptie geschikt zijn. Ze worden in de land- en tuinbouw verbouwd.

Légume-racine est un nom désignant communément un légume souterrain. Les légumes-racines correspondent aux organes souterrains d'une plante qui sont récoltés pour la consommation. Sur le plan botanique, certains de ces légumes ne sont pas strictement des racines car ce sont souvent des organes de réserves tubérisés - des tiges ou des racines pivotantes modifiées - ou même parfois des bulbes...
